GARLIC SOY CHICKEN + ASIAN GREENS

Marinated garlic, soy ginger chicken with a side of Asian greens and rice! An easy to make, BIG on flavour, healthy meal

INGREDIENTS

Marinade

  • 1/4 cup light soy sauce
  • 3 cloves garlic finely chopped
  • 2 teaspoons tamarind paste
  • 1 teaspoon finely chopped pickled ginger

Chicken

  • 3 tablespoons peanut oil
  • 1 kilo chicken breast
  • 3 tablespoons Kecap Manis to glaze

Sides

  • 4 bunches Chinese broccoli
  • 3 large garlic cloves
  • 3 tablespoons oyster sauce
  • 1 whole chilli
  • 3 tablespoons peanut oil
  • 1 + 1/2 cups uncooked rice


INSTRUCTIONS

  1. Add all marinade ingredients together into mixing bowl.
  2. Slice chicken breasts into medium size fillets.
  3. Add chicken to marinade, combine and let sit in fridge for 30mins.
  4. Add rice to rice cooker (or cook rice over stove).
  5. Wash Chinese broccoli and drain well.
  6. Chop bottom of stems then cut into finger length sections separating hard steams to leafy bits.
  7. Add garlic and chilli into mortar and pestle and grind into paste (or finely chop).
  8. Add peanut oil into wok (or large fry pan) on high heat, once hot add chilli garlic paste and stems of broccoli.
  9. Once softened, add all remaining broccoli on high heat and stir until shrinks (should only take a minute or so, don’t overcook). Then add oyster sauce, stir and set aside.
  10. Now the chicken! Heat peanut oil in fry pan on medium heat, add some marinated chicken without crowding the pan, glaze with Kecap Manis and cook on one side until crispy dark brown. Flip chicken on other side, glaze and cook.
  11. Cook chicken in batches repeating the process. Once all cooked, let sit until cool, then cut into thin slices.
  12. Prepare 1/2 cup of cooked rice per serving, stir fried chinese broccoli and chicken into containers for ready made meals or alter recipe and prepare for lunch or dinner and enjoy!
